Hiking Lake Tahoe :: Cascade Falls

Yesterday, Nick and I started out our Sunday with a short hike to Cascade Falls. Spring is the best time of year  for waterfalls for obvious reasons... snow melting = flowing falls. Check back tomorrow to see what we tore apart in our house Sunday afternoon. It's a project that's going to take us at least a week to finish. How did you spend your Sunday?

Wedding Wednesdays: Wedding Season & Etc

2012 is the year of marriage & babies! Besides our own we have 5 other weddings to attend! This year is going to be one big party. On top of all the wedding celebrations, Nick and I are both turning 30 and we're welcoming three babies into the world! No not our own, silly. Nick's cousin just had a baby girl, Layla Jean, earlier this month, his sister is expecting a baby boy mid-July and one of my best friends is due 10 day before our wedding!

Bacon-Wrapped Ginger Shrimp

Last fall I decided to subscribe to Everyday Food and I love it. Every month is full of recipes that typically call for in-season veggies and fruits. Score because you'll usually find them on sale  saving  you some beans! My sister and her boyfriend spent Christmas with us this year meaning we had a nice spread of food over the entire weekend! In the December 2011 issue there was recipe for Bacon Wrapped Ginger Shrimp ! Who doesn't like bacon?! So of course I had to give it a try and they were Delicious!!! I need to have a party just so I can make them again without feeling guilty because I ate them all. (sadly I didn't take a picture, so I'm using a stock photo)

 Ingredients

    13 bacon slices
    1 pound large shrimp, peeled
    2 tablespoons soy sauce
    2 teaspoons finely grated peeled fresh ginger
    1 teaspoon packed light-brown sugar

Directions
Preheat oven to 475 degrees, with rack in upper third. Cut bacon slices in half crosswise and wrap each piece around a large shrimp; secure with a toothpick. In a large bowl, whisk together soy sauce, ginger, and sugar. Add bacon-wrapped shrimp to soy sauce mixture and toss to coat. Arrange in a single layer on a rimmed baking sheet. Bake 10 minutes. Turn on broiler and broil until bacon is sizzling and crisp at edges and shrimp are cooked through, 2 to 3 minutes. Serve warm or at room temperature.

DIY: Farmhouse Kitchen Table

We've been busy making tons of little house changes over the last year (eek!?) so it's about time for some updates. We'll start with our new table for 8! It's grand and we built it. Yes, that's right we built it ourselves!

We were looking for something that sat more than 4, was stylist, durable and didn't break the bank.  Although I love the look of farmhouse tables, I wasn't willing to pay $2,500 for one from  Restoration Hardware. So I had a brilliant idea to save us some beans and build a farmhouse kitchen table. I found plans on ana-white.com and nearly a year ago around this time our new kitchen table was in the works. 

A few weekends later we had a table. Before any sanding could be done all the cracks, holes, etc were filled in with Durham's wood filler. Then the never ending sanding began. After hours upon hours of sanding it looked something like this....

After the sanding we wiped down the table with a tact cloth to prep for stain, tested three different colors and decided on Gunstock.

Two coats and a few hours later it looked something like this. Don't mind the empty lot for sale across the street. We let the stain dry for 24 hours before sealing with 2 coats of tough oil for a nice smooth finish.

Before moving in our gorgeous new table in we had to move out the old. Just in case you don't  recall what it looked like, here you go...

Here's another angle & close up for you.  You may have noticed new chair's (Ikea) a new ceiling fan (Lowes) and new a rug, but you'll just have to wait to hear about those additions.

Holy Guacamole

I love avocados and put them in everything from egg scrambles to sandwiches, but there's nothing better than guacamole. Over the years I've tried various recipes but in the end came up with my own.


Ingredients:
3 avocados
1/2 small red onion
1/4 cup (about) chopped cilantro
garlic salt or sea salt to taste
fresh lime juice to taste

Directions:
Mix the following ingredients in a bowl and blend to desired consistency. I usually hand blend, but if you are looking for a super creamy dip then break out the food processor and go for it.

I hope you enjoy Guacamole as much as I do.
