Roasted-Tomatillo Salsa + Hamilton Beach Stack and Snap Food Processor Review & Giveaway!

I love Mexican food! Hands down it's something I could eat multiple times a week. Not kidding. Growing up in San Diego I had a plethora of amazing Mexican joints to pick from. Now that I'm living in Tahoe that isn't the case. We've found one restaurant actually worthwhile otherwise we make our own. Luckily there's a mexican meat market down the street from us!

When we switched to eating Paleo at the beginning of the year I couldn't wait to try Against All Grain's Roasted-Tomatillo Salsa and Mexican Chicken Chowder. Let's just say it's now one of our favorite dishes to make. Her salsa is incredibly tasty and easy to make and all you need is food processor!

Let's start with the Hamilton Beach Stack and Snap 10 cup Food Processor

Compared to the massive food processor I already had the Stack and Snap Food Processor is nice and compact making it easy for storage, cleaning, and smaller dishes. Don't let it's size fool you. It's mighty and gets the job done. In the few weeks I've had the food processor it's already been used five or six times!

Aside from it being so compact everything stores nicely inside. Yes, you don't have to worry about finding all the pieces when you need to use it. It's a bit loud and blows air while in use, but overall it's the perfect kitchen tool. Plus, you can't beat the price of $59!




Roasted-Tomatillo Salsa 
{via Against All Grain cookbook}


Ingredients
1/2 pound tomatillos - husked and rinsed
1-2 serrano chilies
1 large garlic cloves
1/4 cup chopped fresh cilantro
1/4 cup diced white onion
2 teaspoon fresh lime juice
1/4 teaspoon sea salt
1/4 teaspoon cumin
 
Directions
Preheat oven to 425 degrees

Place the tomatillos, chilies and garlic on rimmed baking sheet in the top third of the oven, about 6 inches away from the heating element. Roast until black spots bubble up and the vegetables soften, about 5 minutes. Flip them over and roast for an additional 5 minutes.


Cool for five minutes, then transfer everything to the processor, including all the juices in the pan. Add the remaining ingredients and pulse until smooth. Chill before serving. Makes about two cups.
