2015 Christmas Cards + Minted Picks

Ahhh... Christmas Cards... are you ready? I'm not. I still need to roundup my little family and snap a few photos. I mean, I have some great photos from the last few months, but I would love one where we're somewhat coordinated and maybe there's a little snow on the ground. Fit Through the Holidays


Can you believe Thanksgiving is just a few days away? Well I can't. Honestly it's amazing how quick this year has flown by. While the average american might gain 10+ pounds this holiday season, I'm working on maintaining. Here are just a few ways I'm staying healthy and fit.

5 Tips to Staying Healthy Through the Holidays

1. Baby wearing while shopping [borrow one if you don't have one] Wearing a baby while power shopping will help you burn more calories and keep you from Christmas shopping for yourself instead of loved ones. #truestory


2. Get Outside with Family and Friends  - Ninja kicks are mandatory whether hiking, snowboarding or just being awesome outside! #optoutside

bistroMD’s Quinoa and Pumpkin Seed Stuffed Acorn Squash  [c/o]
Nutritional Information: (for each serving, serves 8)
Calories: 219 Protein: 5g Carbohydrates: 44g



Ingredients
4 medium acorn squash, halved lengthwise with the seeds removed
3 cups of water
2 cups quinoa
2 teaspoons olive oil
1 ½ cups diced onion
1/2 cup diced carrots
1/2 cup diced celery
1 tablespoon minced cardamom
1/8 tablespoon of turmeric
1/2 cup dried cranberries
1/3 cup diced apples
1/4 cup dried currants
1/3 cup toasted pumpkin seeds
1/2 teaspoon freshly grated nutmeg
1 cinnamon stick
1/2 teaspoon of sea salt Freshly ground black pepper

Directions
Preheat oven to 350 degrees F. Adjust rack to the middle shelf.

Simmer the quinoa in 3 cups of water to make fluffy, this should take 15 to 20 minutes.

While the quinoa cooks, add the onions and 1/2 teaspoon of salt and cook until softened, stirring frequently, about 3 to 4 minutes. Stir in the carrots, celery, cardamom and turmeric. Using fresh apples, cut into small dices and soak with lemon juice. Cover the pan and simmer the vegetables for 5 minutes until they are tender.

In a big bowl, toss together the quinoa and vegetables. Stir in the dried fruit, diced apples, pumpkin seeds, nutmeg and season with salt and pepper.

Brush the skin of the squash lightly with olive oil. Place the squash, cut side down, in a baking pan. Pour 1/2-inch of boiling water into the pan and bake for 20 minutes to soften the squash.

Move the squash to a plate and set aside until cool enough to handle. Stuff the squash halves with the quinoa mix, return them, stuffing-up to the pan, and bake until the flesh can be easily pierced with the tip of a paring knife. This should take 30 minutes or less.

5. Drink More Water/Kick off your day with a Green Smoothie - With all the fun festivities don't forget to stay hydrated. I like kicking off my mornings full off veggies and fruits and don't skimp just because its the holidays.

A Gift Guide For Her

Yay, today is all about gifts for her! Of course, I would love anything from my home cook or fitness enthusiast gift guides, but here are just a few things I have my eye on!

Before we dive into goodies for 'her' I have to say this was actually the hardest list to pull together. Why? Because other than workout gear all I really, really want is for my kitchen to be DONE and my wrist to stop hurting. I can't even clean the bar [which is only 35 lbs]  without it hurting :( ice, ibuprofen and time is what the doctor ordered.

Back to the kitchen. Party people my beautiful harwood floors are being installed!!! After thanksgiving expect lots of house updates. A Gift Guide for Him

I must admit I haven't started any of my Christmas shopping! I know, I know. Plus, I don't have a clue what I'm going to get the hubby! Recently while browsing, I came up with a few ideas. While I'm sure he would love a few, I'm not so sure about a few. Either way here are a few ideas that will hopefully help you find the perfect gift for the guy in your life.

A Gift Guide for the Home Cook

We all have a foodie friend who loves cooking just as much as eating out. I know I mentioned it once or twice, but I seriously can't wait until our kitchen is 100% done. So close! In fact our flooring was delivered today! Ok, back to the home cook. While I'm deeply sadden by the recent world events, I'm thankful for my little family and am holding them a little closer.

Christmas music, gift guides, red cups, decorations, etc. are flying around the internet and it's hard not to get in the holiday spirit. I'm guilty -- having already posted about christmas stockings, pjs, and a gift guide for the fitness enthusiast. Plus, I have plenty more to come!

Today I wanted to talk about Christmas, but about sharing the cheer in another way, giving happiness.

HOW TO GIVE HAPPINESS THIS HOLIDAY SEASON:

1. Adopt a local family in need - There are a lot of families that can't afford Christmas gifts or winter clothing.

2. Donate to your favorite cause - This year not only did I help raise awareness and funds, but I also donated to Barbells for Boobs.


3. Volunteer at your local food bank.

Feeding those in need with the WPR team.
4. Buy a stranger a cup of coffee, pay their toll, etc.

5. Prep freeze meals or cook a holiday dinner for a family with medial issues - it seems as though a new 'go fund me' pops up in my news feed daily. While I know medial bills can add up quickly [Hello, baby in NICU] there are other ways to help out [i.e., coffee & gas gift cards, ready to cook meals, dog sitting, etc.]. Trust me all these things are very helpful. After Emerson was born we loved all the homemade meals from friends.


This year Coca-Cola at Walmart has teamed up with The Salvation Army. Every Walmart Deli prepared meal with Coca-Cola purchased in November and December will provide a meal to families through The Salvation Army, so families in need will be able to enjoy the holidays together over a warm meal. Plus, every photo shared on social media using #givehappiness supports families in need.

Buying a prepared meal gives you more time with to spend with your family, friends, volunteering or adventuring. 


I'm spending my extra time with miss Emerson and inspiring others to achieve their passions.


I didn't know Walmart's prepared pizza was so affordable ! At $5 for a medium pizza you really can't go wrong when you're looking for something quick and easy.

Date Night at Home | Seared AHI Tuna + Wasabi Mashed Potatoes



So it's a Friday or Saturday night and your 20 year old self is ready to par-tay, but the 30 year old is ready for a date night at home followed by cozying up on the couch with a roaring fire, rom-con and big glass of wine. Seriously the inner struggle is real -- even before Emerson.

Since Emerson the Hubby and I have been focusing on saving even more money and like to have date nights in. Emerson goes to bed at 7 p.m. so it's really easy.

I'm a big fish person and probably cook salmon at least once a week. Looking to mix things up, I suggested trying Bumble Bee SuperFresh® Seared AHI Tuna. We had nothing to lose, right?

While their suggested Fall menu sounds A-M-A-Z-I-N-G my sister had a different idea. Oh yeah, did I mention we were at my sister's place in LA?


Our menu was simple and full of flavor: Bumble Bee SuperFresh® Seared AHI Tuna, Wasabi Mashed Potatoes and Sautéed Balsamic Asparagus.


Wasabi Mashed Potatoes

Ingredients
2 lbs rustic potatoes, peeled and quartered
1 tsp minced garlic
4 tbsp butter
1/2 cup butter milk [any type of milk really works]
2 tsp wasabi powder
 salt & pepper to taste
chives for garnish [optional]

Directions
Place potatoes in big pot and cover with cold water. Bring to a boil. Reduce to a simmer and cook until tender, about 10ish minutes.

Drain potatoes. Break up potatoes using a mixer or masher. Add garlic, butter milk, wasabi salt and pepper. Mix until smooth. Add additional milk for a smoother consistency. Add additional wasabi, salt and pepper as needed. Garish with chives and enjoy!


The key to a great date night in is good COMPANY, great FOOD, and plenty of WINE.

Healthy Game Day Eats + A Recipe!

I'm taking a short break from all things Christmas related to talk about some serious stuff, football  + food! Yup, serious stuff. Sunday is football. When I think of football Sunday, I think of tailgating, barbecues and tasty [not-so-good for you] food. Game day food usually isn't the healthiest, but today I'm sharing a dish  that won't leave you feeling guilty afterwards, BBQ Chicken + Brussel Sprout salad! 

Last weekend, while shopping at Safeway I picked up my go-to always fresh Foster Farms Fresh & Natural Chicken and Stubb's chicken marinade. We LOVE Stubb's BBQ sauce and marinades! Other than homemade it's the only BBQ sauce and marinade we buy -- one because it tastes good and two because it's free of high-frustose corn syrup! 


Blogger tip: When bbqing chicken I typically pick thighs and legs. Always marinade overnight.


Here's the thing, you can't just eat chicken! I'm a big fan of salads and with brussels sprout in season I figured it would make the perfect side dish. The salad it super easy to make.  Making ahead allows for more football watching. Don't worry it won't become soggy which also means it's a great side dish for tailgating! #winning.


Brussel Sprout, Cranberry and Quinoa Salad 
via gimme some oven
[serves 4-6]

Ingredients
1 lbs brussel sprouts, ends trimmed then halted and thinly sliced
2 cups cooked quinoa
1 cup dried cranberries
2/3 cups chopped pecans, toasted

orange vinaigrette
  -1/2 cup orange juice
  - 1/2 olive oil
  - 2 tbsp apple cider vinegar 
  - salt & pepper to taste

Directions
Salad: Toss all the ingredients until combined.
Vinaigrette: Whisk ingredients until combined. Pour over salad and toss until coated.



Serve with your favorite BBQ chicken and enjoy!

A Gift Guide for the Fitness Enthusiast

While I typically post gift guides after Thanksgiving this year I decided to start a few weeks early. Monday was all things baby with Emerson's Christmas Wish List. Today I'm switching gears and focusing on fitness gear. I don't know about you, but every year when my birthday, anniversary, christmas, etc. rolls around my wish list usually includes fitness gear. So naturally it only makes sense to create a Holiday Gift Guide for the Fitness Enthusiast. While I have some items [Vitamix + leggings] I wouldn't mind any of the others. I almost feel the title should be fitness essentials!

Shopping Guide | Christmas Stockings

Having kids brings a whole new meaning to Christmas and family traditions. Monday I chatted about Christmas pjs, because who doesn't love new pajamas on Christmas morning. Today I'm back regarding another tradition, Christmas stockings!

Growing up we always had matching stockings and they varied over the years. Our current stocking situation is non existent. I would love to start fresh and buy three 'matching' stockings. I use matching loosely because they don't necessarily need to exactly match -- they just need to work effortlessly together.
