Monster Cookie Bites + #MakeItAMovieNight

So here's the thing since having Emerson Nick and I haven't have a date night out in a long time. Instead we typically opt for a date night in. There are a few reasons for this, one we're saving money [hello kitchen remodel and baby in the NICU] and two I'm a great cook [IMO]. Plus, if we're going to hire a sitter we would rather go on a day date [i.e., snowboarding, long hike, mountain biking, etc.]. With that said, this past Saturday we had a date night in. Think movie, delicious eats, sweet treat and popcorn. 

While running errands Saturday I managed to swing by Walmart for all the key essentials: Orville Redenbacher 6 pack Movie Theater Popcorn, MARS Milk Chocolate and Peanut M&M’S® Chocolate Candies and Sprite.

To say the hubby was pleased, I brought home treats, would be an understatement Since I've had him eating 100% paleo for the last week he was happy to have a little treat. Originally I was planning to make caramel popcorn, but last week got the best of me so I turned to a no bake treat! Plus, I was looking to make something a bit 'healthier' and filling. Since I love date protein bites I made no bake monster cookie bites! Yup, a play on the very popular Monster Cookies. Please note: monster cookies and bites are not paleo.


You're probably asking, "What about the movie?" Well we channeled are youth and watched Goosebumps! Yes, enter "you know you were a child of the '80s if you..." I can't wait until Emerson is old enough to read Goosebumps!

Now for the real good stuff, Monster Cookie Bites! Warning they are a bit addictive.


Monster Cookie Bites
makes 12

Ingredients

1 1/4 cups old fashioned oats
1/2 cup creamy almond butter [or any nut butter really]
1/4 cup honey
1/3 cup Milk Chocolate M&M’S® Chocolate Candies
1/3 cup mini chocolate chips

Directions

Place all the ingredients in a medium bowl. Mix until everything is combined and chocolate pieces are coated with wet ingredients.

Line cookie sheet with parchment paper.

Gently roll mixture into small balls [about 1 inch round].

Place bites on a cookie sheet. Place in fridge for about 10 or until the bites have firmed up a bit.

To store: Place bites in airtight ziplock bag and place in refrigerator or freezer. I suggest making a double batch and freezing half for later.

  3. It seems to me not healthy at all, but it can be nice addition for your rest time. I try to cook this and feel some embarrassing, maybe because consistence was watery. Maybe I ask for paper writing service to help me with it the next time. Thanks for recipe.
