Avocado Toast Six Ways + A Giveaway!

Well, Hello!  Yes, I'm still here and I survived a solo road trip with a 14 month old. While I wouldn't recommend it it's possible! 

I love breakfast and one of my favorite dishes is avocado toast. Unless you live under a rock it isn't anything new. For awhile it was all the range. Funny thing, this California girl grew up eating avocado toast. It's actually something I could eat everyday! However, I often add a little something something to my toast. I'm here to share my six favorite ways to spice up avocado toast.

First things first, you need some killer bread and a toaster. My toaster recently broke, so instead of buying a new one I've been using my Hamilton Beach 4 Slice Easy Reach™ Toaster Oven with Roll-Top Door [c/o].

Avocado Toast Six Ways
1. Avocado with strawberries, goat cheese, fresh basil and balsamic vinegar. [optional: olive oil]
2. Avocado with light butter, cucumber, scallions, and fresh dill.
3. Avocado with light butter, dried berries and sunflower seeds.
4. Avocado with a egg over medium topped with arugula and bacon.
5. Avocado with baby heirloom tomatoes, mozzarella, fresh basil and balsamic vinegar. [optional: olive oil]
6. Avocado with butter, bacon and scallions.

Layer ingredients as desired. Salt and pepper to taste. Enjoy!


While toasting bread is pretty simple, there are so many things you can cook in a toaster oven! I've found the toaster oven is prefect for flatbread pizzas, portobello mushroom burgers, crab cakes or sweet potato fries! The options are really endless. Do you have a toaster oven?

  9. I used one of these when i was in school. I would come home everyday and make a tostada with just refried beans, cheese, and salsa.....yum! So that would probably be the first thing i would make!

  15. Our kids eat a lot of fish sticks and chicken nuggets, but I hate heating the whole oven just for that, so I would use this to cook foods like that.

  45. I'm addicted to avocado toast right now {thanks for sharing these recipes!} so this would be 1st thing I'd use the toaster oven for! My husband likes to make English muffin & egg breakfast sandwiches - this would be great for those too. And bruschetta bread, toasted cauliflower, mini pizza melts, etc.!
