Banana Strawberry Protein Muffins

While I love a sweet treat I eat to fuel my body 99% of the time. With that said I basically make everything from scratch so I know what's in it. You name it I've either made it or have thought about making it. ;) 

Recently Bob's Red Mill sent yours truly some samples of their new protein powders. I know more protein! I'm drowning in protein powder over here. Typically I throw a scoop of protein in my smoothies, but I wanted to try something new. Since Bob's Red Mill is known for their flours, grains, etc. I figured why not bake with it! What?! Crazy town, right?

I have a confession, I've never baked with protein powder until now! Honestly, I'm not sure why it took so long. Either way these muffins are packed with protein and only 100 calories! WHAT?! I know crazy right.

For this particular recipe I used Bob's Red Mill Protein & Fiber Nutritional Booster. This unique blend is made from pea protein powder, chicory root fiber, psyllium husk powder, chia seeds and beneficial probiotics.

Banana Strawberry Protein Muffins [Adapted from ifoodreal]
Makes 12 Muffins 

Ingredients

2 ripe bananas
1 egg
1/2 cup Greek Yogurt, plain
1/4 cup almond milk, unsweetened
2 tsp pure vanilla extract
1 up whole wheat flour
1/4 cup unbleached flour
1/2 cup Bob's Red Mill Protein & Fiber Nutritional Booster
2 tbsp flax seeds
2 tsp baking powder
1/8 tsp salt
1 cup fresh strawberries, diced
Cooking spray

Directions

Preheat oven to 350 F.

Spray muffin baking pan with cooking spray and dust with flour. Set aside. You DO NOT want to use muffin liners.

In a medium bowl mash bananas until smooth. Add egg, Greek yogurt, almond milk and pure vanilla extract. Mix with a fork until well combined.

In another bowl add all dry ingredients: whole wheat flour, protein powder, flax seeds, baking powder and salt. Combine dry ingredients. Add dry ingredients to wet ingredients and mix. Do not overtax!

Fold in strawberries. Use a 1/4 cup to distribute the batter evenly among muffin tin. Bake for 20 minutes. Cool completely before serving.

Sometimes you need a quick refresh for your mind, body and soul. Daily exercise and healthy food does the trick for me. Not only do I feel amazing after a sweat session, but it helps keep my head clear. My go-to is crossfit or a long mountain bike ride.

As a mom this is more important than ever before. I want to lead by example. My goal to to teach Emerson how to love being outside and to appreciate the great outdoors. Of course, I'll love her even if she's a girly girl. I just want to raise a happy and healthy kid and there really isn't a better place than Tahoe to do so [IMO]!

Anyway, if you're an avid reader you know, a typical day in Tahoe is spent outside either at the beach, biking, hiking or running through the woods. Choosing the right fuel is key to staying healthy and active. With a toddler running around we've upped our game and we keep a box of Emergen-C Raspberry on hand at all times!


Looking to incorporate an extra dose of vitamin C into our daily life I started adding a packet of Emergen-C Raspberry into afternoon smoothies. It's a nice little boost of energy, too.

Raspberry Refresher
Serves 1

14g vanilla protein powder
1 cup frozen raspberries
1 TB white chocolate chips
1 cup water

Fresh Watermelon Salad with Feta & Mint

I scream, you scream, we all scream for ice cream!

It's only natural I talk about ice cream every now and then, right? Don't worry I'll get to the tasty salad in a minute. Yes, it's true this fit mom actually eats ice cream. gasp. Did the world just stop? HA. To say I love ice cream would be an understatement. I can't keep it in the house because it's gone within days of buying it. In fact, half of the DREYER’S SLOW CHURNED® Caramel Delight Light Ice Cream I bought Thursday is half gone. Time to hit the gym :)


Let's chat about BBQs for a hot minute. The fact is you can't have a BBQ without a sweet treat. But let's face it you don't need a fancy tart or cake. A homemade brownie topped with a scoop of DREYER’S SLOW CHURNED® Vanilla Light Ice Cream will do the trick. BTW - homemade brownies are the only way to go.

While potluck BBQs are typically easier you can't guarantee everything will blend well together. Planning a BBQ menu is easier if you tell guests to bring their favorite beverage or dessert to share. This way you can insure the BBQ spread is cohesive.


HOW TO CREATE A YUMMY BBQ MENU

Appetizers
Chips, salsa and guacamole are always fan favorites, but try something a little different. Maybe a cheese and meat platter, baked spinach and artichoke dip or an array of hummus and veggies. I suggest having at least 2-3 different types of appetizers. Variety is the spice of life.

Meat
Ribs and BBQ Chicken are summer staples. Well, at least in our house during summer months.

Sides
Honestly sides can make or break a BBQ. I suggest making 3-4 side dishes. My favorite BBQ sides include corn on the cob, potato salad, garden salad and watermelon salad with feta and mint! This is probably one of the easiest sides to make. Toss 1 handful chopped mint,  4 cups watermelon and 1 cup feta. Top with a balsamic reduction is desired. Enjoy! it's sure to be a crowd pleaser.

Dessert
My favorite part of a BBQ! While I've never met a dessert I haven't liked my go-to is homemade brownies topped with a scoop of ice cream. Zucchini Bread Goodness + Cleaning Tips

Once again the weekend flew by way too fast! We attempted to enjoy a date night, but lack of babysitters and family thousands of miles away it didn't happen. Instead Nick took one for the team and watched Emerson while I met friends at the newest and coolest hotel in South Lake Tahoe, The Coachman.

That was pretty much the highlight of the weekend. Aside from working out and enjoying the beach I meal prepped and cleaned! Sometimes I feel like I'm always cleaning. Nick did tell me if I lock in another client or two we can hire a cleaning lady! Yes, please!!!

In the meantime, I'll just keep cleaning and picking up the house as I can. I love cooking, but hate cleaning up the mess especially when I have to hand wash a handful of dishes. Now for the good stuff, Zucchini Bread!

Working from home makes it easy for me to make meals throughout the week, but my hubby needs a breakfast he can grab and go. Especially since he has to be at work at 7 a.m.! I know poor guy.

Anyway, this week I made Zucchini Bread! Honestly zucchini anything is kind of a summer staple in our house. Recent dishes include Zucchini Lasagna and Honey Pecan Zucchini Muffins [see recipe tab for more details]! Can you say yum.


Simple Zucchini Bread
via Yellow Bliss Road
Makes 2 loafs or 24 muffins

Ingredients

3 eggs
3/4 cup oil
2 cups sugar
1 tablespoon vanilla
2 cups zucchini, grated
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon cinnamon
1/4 teaspoon baking powder

Optional: 1 cup pecans [chopped], handful of berries [strawberries, blueberries, raspberries, etc.]

Directions

Preheat oven to 350 degrees.

Spray pan with cooking spray.

In a stand mixer, combine oil, sugar, eggs and vanilla. Stir in zucchini.

In a separate medium sized bowl, blend flour, baking soda, baking powder, salt and cinnamon.

Stir into the wet mixture, just until combined. Stir in optional ingredients if desired.
Bake for 45 minutes to an 1 hour. Cool completely on wire racks.

Freeze one loaf for later and enjoy the other now!

How to Create a Succulent + Cactus Garden

I inherited my love for plants and green thumb from my dad. As a child we always made a weekend trip to the nursery, or at least it seemed like it. Typically I always got to pick out my own a plant. Without fail I always picked out a succulent or cactus. It wasn't easy picking either. I'm sure what was only 15 minutes seemed like hours to me as a child. There were a few times I picked something other than a succulent, but those were far and few between. My dad probably regrets letting me plant mint in his garden -- it NEVER went away.


To this day my dad and step-mom's patio is lined with pots of succulents from my childhood.


Over the years, I've wanted to recreate a succulent/cactus garden for my house. However, living in Tahoe is a bit different than Southern California.


I've been persistent though. Just ask my husband. I have succulents here and there, but not a fun potted garden.


It was time for a change. Last weekend while I was shopping at Home Depot, for nothing related to succulents, on a whim I picked up a new pot, potting soil, and a few succulents. You all should know the hubby wasn't there to stop me. HAHA


After arriving home he promptly told me I wasn't allowed to go shopping by myself. Why? Well I came home with nothing he had on the list -- oops.


But like my father, he indulged in my vision.


How to Create a Succulent + Cactus Garden


First, I filled the pot with a little cactus + succulent potting mix. If you're not using the specialty soil I suggest using mini pebbles as your first layer to help with drainage.


Then I roughly figured out how I wanted to arrange my succulents for the indoor garden.  I purchased three new plants, but planned to incorporate a few I already had randomly in the house!




One at a time, I planted in each succulent, scooping and packing in cactus soil wherever needed and pushing everything in tightly.




Next I put in a layer of soil on top. If you're looking for something more decorative topsoil with mini pebbles. It does add a nice touch. I left a little space so I could add 1-2 more succulents over time. Oh, and don't forget to water once complete.




The Zebra succulent is a clipping from my childhood garden!




Easy peasy! Now I just have to decide where it will live in the house. Currently it's living on my kitchen island, but I'm thinking it would make for a fun centerpiece on my dinning room table.


While I love how simple and beautiful succulents are, they're not fragrant like flowers. Who doesn't love a fresh smelling house? This is where Glade® and Home Depot come to the rescue, again. Yes, more items not on the hubby's list. Do you see a pattern here?

My 5 Day Hike Essentials

If you're an avid reader then you know my husband and I loving exploring Tahoe. Before Emerson  came along we hiked nearly every weekend. Although we don't get out as often we still manage to hike with Emerson in tow.

While I might not be an expert, it's safe to say I've hiked enough to know what to pack and what not to pack. I remember the first time Nick and I hiked. Little did I know what I was getting into. I showed up with nothing, but myself. Poor city girl didn't have a clue. Ten years later I'm now a avid  and experienced hiker.



Between my stuff, Emerson and the dog's food, etc. my pack is typically pretty full. However, there are a few items I never leave home without.

MY 5 DAY HIKE ESSENTIALS 

BACKPACK
Kind of a no brainer, but you would be amazed at how many people I pass on the trail without a backpack. A backpack is key because how are you going to carry everything? I recommend purchasing a pack with a hydration system.

WATER + FOOD

Please do not hike without water and lots of if. It's better to have more than you need. Along with water you'll water to pack snacks/lunch. The length of the hike will determine whether you should pack lunch or not, but I always pack a few bars, fruit and trail mix. Again it's better to pack more than you need.


SUNSCREEN
Today's PSA: Never leave home without sunscreen. You'll want to reapply.

LAYERS
You never know when the weather is going to change in the drop of a hat. Or maybe it's a early morning start. Maybe it's super sunny. I personally pack a hat and lightweight jacket.

How to Create and Capture Summer Memories

If you have kids then this pretty much sums it up.  These are key for the annual photo album!


Head to the Beach, Park, etc.
Basically get out there and have some fun! It's summer don't stay inside get outside and soak in all the vitamin D you can! Summer is funnier with friends so give them a call and snap some photos while you're at it.


Watch Summer Classics
After a full day of fun once home, pop some popcorn, kick back and watch a classic movie . BTW -VUDU helps create the perfect date night in!

Dog Days of Summer
